- 1 (15.25-ounce) yellow cake mix box
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tbsp Jello powder (of each Lime, Lemon, Strawberry, and Orange OR use 1 (3 ounce) box for all cookies)
- 1/2 tsp oil
- 1/4 cup sugar (for pressing the cookies down)
Preheat the oven to 350 Fahrenehit and line a baking sheet with parchment paper.
In the large mixing bowl, add the yellow cake mix, 1/2 cup of oil, and 2 eggs.
Mix until combined - the dough will be sticky.
Divide the dough between the 4 medium bowls as evenly as you can.
Add 2 tbsp of Jello powder to the dough, so that each bowl is a different flavor.
Mix each dough with a spoon until well combined.
Scoop the dough with the cookie scoop and place each ball 2-3 inches apart. This will give the cookies enough space to spread while baking.
Rub oil onto the bottom of a drinking glass with your finger or a paper towel. Dip the bottom of the glass into a small bowl of sugar. Press down on the cookie to flatten it.
Bake the cookies for 8-10 minutes or until there is a light golden edge around the cookie. Allow to cool completely on a cooling rack before serving.
Tip: for a brighter and sweeter cookie, you can add a bit more powder. Do not add the entire package of Jello - this will be too sweet and make a grainy texture.
If you skip pressing the cookies flat before baking, you will have thicker cookies that require 12-14 minutes to bake, or until the edges are a light golden brown.
