Cake Mix Jello Cookies Recipe

Can I use any color of Jello for this recipe?

Yes, you can use any Jello flavor but the colors will be affected by the yellow cake mix used in this cookie recipe. For example, blue Jello will end up looking green and purple may turn slightly gray. You can add food coloring to turn the cookies blue and purple if you want to use those flavors.

For the cookies pictured, we used lemon, lime, strawberry, and orange Jello and these flavors all work well with the cake mix.

Can I use white cake mix and egg whites so that the dough isn’t yellow?

Yes you can – in this case, you’ll need a box of white cake mix and 4 large egg whites (equal to 1/2 cup of egg whites). Doing this will make a flatter cookie but they still taste delicious and you don’t need additional food coloring or extra Jello powder. Purple Jello mix will still turn out slightly gray.

Can I use just 1 flavor of Jello for this recipe?

Yes, you can. If you’d like all the cookies to be the same flavor, then do not divide the dough and simply add all of the powder from a 3-ounce Jello box.

What if I don’t want to press the cookies flat before baking?

If you skip pressing the cookies flat before baking, you will have thicker cookies that require 12-14 minutes to bake, or until the edges are a light golden brown.

Why did my cookies come out hard?

If the cookies are too hard after baking, try baking the next batch for fewer minutes.

How should I store these cookies?

These cookies can be stored in an airtight container for 3-5 days, or in the freezer for up to 6 months.

Jello Cookies

An easy cookie to make with Jello and cake mix!

Equipment

  • 7 Bowls (1 large, 4 medium, 2 small)
  • Spoons
  • Spatula
  • Cooling rack
  • Hand mixer (optional)
  • Drinking glass
  • 2-inch cookie scoop

Ingredients

  • 1 (15.25-ounce) yellow cake mix box
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tbsp Jello powder (of each Lime, Lemon, Strawberry, and Orange OR use 1 (3 ounce) box for all cookies)
  • 1/2 tsp oil
  • 1/4 cup sugar (for pressing the cookies down)

Instructions 

  • Preheat the oven to 350 Fahrenehit and line a baking sheet with parchment paper.
  • In the large mixing bowl, add the yellow cake mix, 1/2 cup of oil, and 2 eggs.

  • Mix until combined – the dough will be sticky.

  • Divide the dough between the 4 medium bowls as evenly as you can.

  • Add 2 tbsp of Jello powder to the dough, so that each bowl is a different flavor.

  • Mix each dough with a spoon until well combined.

  • Scoop the dough with the cookie scoop and place each ball 2-3 inches apart. This will give the cookies enough space to spread while baking.

  • Rub oil onto the bottom of a drinking glass with your finger or a paper towel. Dip the bottom of the glass into a small bowl of sugar. Press down on the cookie to flatten it.

  • Bake the cookies for 8-10 minutes or until there is a light golden edge around the cookie. Allow to cool completely on a cooling rack before serving.

Notes

Tip: for a brighter and sweeter cookie, you can add a bit more powder. Do not add the entire package of Jello – this will be too sweet and make a grainy texture.
